Here’s a classic Christmas cookies recipe that’s versatile, festive, and easy to make. These cookies are perfect for decorating or enjoying as-is.

Ingredients

For the cookies:

  • 2 ¾ cups (350g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract (optional)

For the icing:

  • 2 cups (240g) powdered sugar
  • 2–3 tablespoons milk (or as needed for consistency)
  • 1 teaspoon vanilla or almond extract
  • Food coloring (optional)
  • Sprinkles or other decorations

Instructions

Step 1: Prepare the dough

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat the softened butter and sugar with an electric mixer until light and fluffy (about 2–3 minutes).
  3. Mix in the egg, vanilla extract, and almond extract (if using) until combined.
  4. Gradually add the flour mixture, mixing just until incorporated. Do not overmix.
  5. Divide the dough into two discs, wrap in plastic wrap, and chill for at least 1–2 hours (or overnight).

Step 2: Bake the cookies

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Roll out the dough on a floured surface to about ¼ inch thick. Use cookie cutters to cut out festive shapes like stars, trees, or snowflakes.
  3. Transfer the shapes to the prepared baking sheets, spacing them about 1 inch apart.
  4. Bake for 8–10 minutes, or until the edges are just lightly golden.
  5. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Step 3: Decorate the cookies

  1. In a small bowl, whisk together the powdered sugar, milk, and extract to create a smooth icing. Adjust the consistency by adding more milk (for thinner icing) or powdered sugar (for thicker icing).
  2. Divide the icing into small bowls and add food coloring if desired.
  3. Decorate the cooled cookies with the icing using piping bags, spoons, or a knife. Add sprinkles or other decorations while the icing is wet.

Tips for Success

  • Chill the dough: This prevents the cookies from spreading during baking.
  • Use gel food coloring: It gives vibrant colors without thinning the icing.
  • Store the cookies: Keep in an airtight container at room temperature for up to a week, or freeze undecorated cookies for up to 3 months.
