Providenciales, TCI, June 3, 2016 – Another Turks and Caicos team left the country on Sunday for Miami, Florida where today they will participate in the highly anticipated Caribbean Hotel & Tourism Association’s annual cooking challenge between Caribbean chefs representing their countries.

TeamTCI is led by Colin Watson, Executive Chef at Beaches Resort Villages and Spa.  Watson said chefs from across the country volunteered to represent the 649, but that list was narrowed to nine and includes a bartender and junior chef.  Watson talked about the competition at Taste of the Caribbean.  “sweet potatoes, casava, kallalu, collard greens,  all the things that you would expect that we get in the Caribbean locally.  We’re then allowed to select a few of those items into our basket to help us finish the dish.  You then have to look at the team to see the dynamic, can they jump into that situation, and they’ve done a fantastic job.”

Anguilla, The Bahamas, Barbados, Bonaire, Curacao, Jamaica, Puerto Rico, St Lucia, St Marteen, St Martin, Suriname, Trinidad and Tobago and the US Virgin Islands are in the showdown being held at the Hyatt Regency.  Taste of the Caribbean is more than a chef challenge though; it is a forum where the business of F&B, or Food and Beverage in hotel and tourism takes center stage.
